Toussaint Cellars is a micro boutique winery established in 2016.
Wines are handcrafted in limited quantity to fully express the unique varietal and vineyard characteristics of Santa Barbara County.
French, Italian and Spanish varietals are produced to be enjoyed with family and friends, great food and music.

100% Sangiovese from the Adobe Canyon Vineyard in the Los Olivos District of the Santa Ynez Valley. Cherry notes and bright acidity compliment a wide variety of foods. Aged 12 months in neutral French oak with a short period in new French oak to add complexity.

A single Vineyard field blend from the Adobe Canyon Vineyard in the Los Olivos District of the Santa Ynez Valley. 50% Sangiovese and 50% Tempranillo aged 12 months in neutral French oak. The bright acidity and cherry notes of the Sangiovese are rounded out by the earthy tones of the Tempranillo.
Winemaker Notes
Both the Tempranillo and Cabernet Franc were 100% free run after fermentation and aged separately in French oak (50% new). The Fruit and Spice of the Adobe Canyon Tempranillo is balanced by the new oak tannins and savory characteristics of the Mira Laguna Cabernet Franc in the final 50/50 blend. The resulting wine is similar in style to a Spanish Rioja but with the Cabernet Franc adding additional complexity for a variety of food pairing choices. Pairs well with a multitude of foods, including tapas, grilled meats, pizza, hamburgers, Lamb, beef stew and hearty fish dishes.

Fermented with 25% whole clusters and aged 1 month in new French oak before transferring to neutral French oak for an additional 11 months aging. Subtle tannins and smooth mouthfeel allow for the full expression of the Mira Laguna fruit characteristics. Pairs with grilled meats, vegetables, wild game and beef stew.

100% free run fermented with 25% whole clusters and barrel aged 16 months in 60% new / 40% neutral French oak. Good structure from the new oak tannins while preserving the full expression of the Mira Laguna fruit characteristics. Pairs with grilled meats, vegetables, wild game and beef stew.

Fermented in neutral French oak for 29 months. Like a Ballerina, this Chardonnay is delicate, yet strong and complex. Treat with grace and never underestimate.
